I developed this low-fat dish when I was on a skiing vacation over Christmas one year and didn’t have an oven large enough to hold a whole turkey. It was such a hit that I now make it year-round. Although you may not want to give up your turkey dinner, this loaf also is perfect for holiday buffet tables. It can be made ahead, then sliced as you would a terrine or pate. It retains a moist texture that comes from the undiluted apple juice, but be careful not to overcook it. It is good served with traditional side dishes and condiments, such as dressing and cranberry sauce.
TURKEY LOAF
Preparation time: 20 minutes
Cooking time: 1 hour 15 minutes
Yield: 8 servings
2 pounds lean ground turkey breast, without skin
1/2 cup each: fresh bread crumbs, chopped onion
1/4 cup each: chopped parsley, chopped celery, toasted walnuts
1 tablespoon corn-oil margarine, softened
3/4 teaspoon lemon pepper
1/2 teaspoon salt
1 clove garlic, minced
4 tablespoons frozen apple juice concentrate, thawed
1. Heat oven to 350 degrees. Lightly but thoroughly mix turkey, bread crumbs, onions, parsley, celery, walnuts, margarine, lemon pepper, salt, garlic and 3 tablespoons of the apple-juice concentrate in large bowl.
2. Shape into loaf and place in 13- by 9-inch baking dish sprayed with non-stick vegetable spray. Brush loaf with remaining 1 tablespoon juice concentrate. Bake until nicely browned and cooked through, about 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 170 degrees. Let rest 10 minutes before slicing.

SPINACH CHEESE BREAD
Preparation time: 15 minutes
Yield: 12 servings
Cooking time: 55-65 minutes
3 cups Bisquick
1 can (10 3/4 ounces) condensed Cheddar cheese soup, undiluted
3 large eggs
1/4 cup vegetable oil
1 tablespoon caraway seeds
1 box (10 ounces) frozen chopped spinach, thawed, squeezed dry
1. Heat oven to 350 degrees. Combine all ingredients except spinach in bowl of electric mixer. Beat until well mixed, about 1 minute. Stir in spinach by hand until well blended. Pour into greased 9- by 5-inch loaf pan.
2. Bake until wooden pick inserted in center comes out clean, 55 to 65 minutes. Cool 20 minutes; remove from pan to cooling rack.

A. This is an easy, hearty bread that would be good with a soup-and-salad dinner. I only needed half as much added fat in my revision of this bread, and by using a low-fat baking mix and egg substitute I was able to solve most of the other nutritional problems. I decided to leave the cheese soup alone, because making a lower-fat version of it would have made the recipe too long and complicated.
LIGHTER SPINACH CHEESE BREAD
Preparation time: 15 minutes
Cooking time: 60-65 minutes
Yield: 12 servings
3 cups low-fat baking mix
1 can (10 3/4 ounces) condensed Cheddar cheese soup, undiluted
3/4 cup egg substitute
2 tablespoons canola oil
1 tablespoon caraway seeds
1 box (10 ounces) frozen chopped spinach, thawed, squeezed dry
1. Heat oven to 350 degrees. Combine all ingredients except spinach in bowl of electric mixer; beat 1 minute. Stir in spinach by hand until well blended.
2. Pour batter into 9- by 5-inch loaf pan sprayed with non-stick vegetable oil spray. Bake until wooden pick inserted in center comes out clean, 60 to 65 minutes. Cool 20 minutes, remove from pan and serve warm.
