This easy and tasty cold dish is a fine addition to any menu and is perfect for entertaining because it can be made well ahead of time. In fact, it is even more delicious served two or three days after it’s made when the flavors have had a chance to marry. It can be served either as a colorful first-course salad or as an accompaniment to the entree. This is also good with 1/4 teaspoon of dillweed added to the dressing.

COLD PEA SALAD

Preparation time: 15 minutes

Chilling time: 2 hours

Yield: 8 servings

2 cups fresh or frozen green peas, thawed

8 green onions, chopped, including green portion

1/3 cup each: light sour cream, non-fat plain yogurt

1/4 teaspoon seasoned salt

1. Steam fresh peas until tender but still firm. Drain in colander; run under cold water to stop cooking and preserve color.

2. Stir together green onions, sour cream, yogurt and salt in medium bowl. Add peas; carefully fold to combine.

3. Cover tightly; refrigerate until cold, about 2 hours.
