Dallas’ Palm restaurant got a happy surprise this week.

The restaurant had not ordered beef for the weekend when the Federal Aviation Administration shut down air travel after Tuesday’s terrorist attacks.

Then its Chicago beef supplier called from Dallas/Fort Worth International Airport.

“They said: `We have a shipment for the Palm in Nashville and the Palm in Charlotte, and we can’t get it there. Can you use it?'” said assistant general manager Darrel Gross. “Now we’re set for the weekend.”

The meat–1,000 pounds of steaks and tenderloins worth about $30,000–stayed in an airport cooler until Thursday, when it was delivered to the Palm.

The beef switch was less fortunate for the Charlotte and Nashville Palms, which had to scramble to find weekend supplies.

Chefs in Charlotte called an Atlanta beef supplier who could deliver by truck, said assistant chef Adam Kaufman.

Like many U.S. restaurants, the Palm experienced a dip in evening customers after Tuesday’s attack kept many patrons in front of their television sets, Mr. Gross said.
