Apparently, Jimmy Bannos Jr. isn’t putting in enough hours.

The chef/partner at The Purple Pig, the Michigan Avenue restaurant that’s already open from 11:30 a.m. to midnight most days, will launch breakfast service, available 8 to 10:30 a.m. Monday through Friday. The first day of breakfast is this Wednesday.

“There aren’t a lot of choices for breakfast around here,” Bannos said. “We’re going to start small, so we execute everything well.”

Expect a grab-and-go breakfast bar, albeit a highly sophisticated one. The emphasis will be on piadine, grilled Italian flatbread sandwiches with such ingredients as Kurobuta belly bacon, house-cured sausage and so forth. Gluten-free piadine will also be available. The signature sandwich will be an English muffin with egg, foie gras, truffle sausage and membrillo (quince paste).

Bagels with smoked salmon, fried smashed potatoes and pastries will fill out the menu. The featured coffee comes from Counter Culture, a Durham, N.C., company whose coffee can be found at Alinea, Spotted Pig (New York) and Canlis (Seattle).

“We’re making everything in house,” said Bannos. “Our own Greek yogurt, cream cheese, our own bagels — right down to the ketchup, the whole deal.”
