Who said an old restaurant can’t learn new tricks?
While it’s common for a new concept to start as a food truck before moving into a brick-and-mortar location, Carnivale is planning the opposite. The restaurant, which has been serving creative Latin-American cuisine in a flamboyantly designed, truly distinctive space for more than 10 years, just announced it is launching a food truck.
Carnivale’s executive chef, Rodolfo Cuadros, designed the menu, which is mostly full of Latin-inspired dishes that are easy to eat on the go. Planned menu items include crispy cod tacos, hand-cut French fries with chimichurri and a frita Cuban burger made with chorizo, cheddar and aji amarillo aioli.
The truck, which plans to be as colorfully decorated as the restaurant itself, is set to begin any day now. To find out where the truck will be headed each day, check out its Twitter feed at @Carnivale_Truck.
