The following is a quick dish thanks to a packaged cheese tortellini.
TORTELLINI WITH TOMATO ROSEMARY SAUCE
Preparation time: 15 minutes
Cooking time: 5 minutes
Yield: 3 servings
1 1/2 cups good-quality tomato sauce
1 1/2 teaspoons dried rosemary, crushed
3 tablespoons plain low-fat yogurt
3/4 teaspoon arrowroot
Freshly ground black pepper to taste
1 package (9-ounces) cheese tortellini
1/4 cup grated Parmesan cheese
1. Heat large pan of water to boil. Put tomato sauce and rosemary in a medium saucepan. Heat to simmer. Combine yogurt and arrowroot in small bowl;
stir in a couple of tablespoons of hot sauce, then stir mixture into hot sauce. Simmer 2 minutes. Stir in pepper and keep warm.
2. Put tortellini into boiling water and cook according to package directions. Drain and add back into hot pan. Add sauce and Parmesan; serve immediately.
