Paris Club Bistro & Bar (59 W. Hubbard St., 312-595-0800) introduces a new cocktail menu Tuesday from mixologist Paul McGee.
McGee has become synonymous with tiki drinks since the opening of Three Dots and a Dash in summer 2013, but his latest cocktail program harkens to the classics and is inspired by a recent trip to the City of Light. He also consulted cocktail canon (“The Savoy Cocktail Book,” Jerry Thomas’ Bartenders Guide, Charles Baker’s “Gentleman’s Companion, Harry Johnson’s “New + Improved Bartender’s Manual”) for guidance from history.
Around 21 cocktails long, the menu includes elegant aperitifs made with Champagne (Royales), sours and daisies (similar to sours but prepared with orange curacao), cobblers (fresh concoctions with fruit and herbs), collins and fizzes. They’re the kind of drinks that will remind early fans of McGee of his days at the Whistler.
Paris Club re-opened last spring as a cozy, intimate space. The new cocktail program is considered the finishing touch.
